Grass fed beef and pineapple salad.

Steak and pineapple chop salad

Coat both sides of steak with steak rub. Put aside. Cut lettuce, tomatoes, red pepper, onion and pineapple into small pieces. Place in large bowl. Heat a frying pan to medium heat and cook steak for 5 minutes. Turn over and cook for another 5 minutes. Remove steak, put it on a plate and let it sit for at least 5 minutes. Cut in strips across the grain and then cut strips into small pieces. Place on top of salad. Crush 2 handfuls of chips over salad. Add dressing and toss.

  • two heads romaine lettuce
  • 1 red pepper
  • 1 big handful chopped red onion (need 1 additional spoonful for dressing)
  • 2 roma tomatoes
  • 1 big handful chopped fresh pineapple
  • 1 lb top sirloin steak or ball tip steak
  • 1 bag tortilla chips
  • 1 bottle steak rub

 

Dressing

For dressing use either a store bought vinaigrette or sesame dressing. 

Or combine the following and stir:

  • 1/4 c. vegetable or peanut oil (water)
  • 1/4 c. sugar
  • 1/4 c. olive oil
  • 1/4 c. red wine vinegar
  • the juice of 1 lime, fresh
  • 1 garlic clove smashed and chopped
  • 1 spoonful salt
  • 1 spoonful onion
  • 1 spoonful onion powder
  • a sprinkle of paprika
  • a sprinkle of hot red pepper
